After arriving at this remote ranch, only 15 miles from the Mexican border, many guests find they have no reason to leave our peaceful property until it’s time for them to return home.

Our executive chef practices within the culinary influence of Patricia Quintana, Mexico’s famous chef, teacher and author. Drawing inspiration from the richly diverse gastronomic traditions of ancient cultures, we skillfully infuse traditional dishes with distinctive elements from other continents. Only the freshest produce, meats and spices are used. The resulting meals are masterpieces – elegant and delicious with a regional flair.
Each morning, a hearty buffet breakfast is served, featuring eggs, bacon, toast, fruit and more. At night, one mouth-watering recipe is presented to the waiting patrons.
OUR DINING AREAS
Our primary dining room is on our porch next to the living room in Cíbolo, which has beautiful views of our lake and mountains. Be intrigued by our collection of 88 hand-carved masks from festivals all over Mexico as you dine family-style and meet the other guests seated around you. When we have enough guests, meals are served in the impressive Great Hall of our 1857 adobe Cíbolo Fort, which can accommodate 42 people.
Depending on the season, we offer meals to small groups under the arbor by the swimming pool where you may dine in a beautiful outdoor setting. We, of course, are happy to prepare picnics and, with prior arrangement, to provide outdoor campfire dinners for groups.
Hours of Operation:
Linger after a fine meal, sit poolside on a warm afternoon, or bask in the glow of a friendly campfire with the perfect glass of wine. We maintain a large wine cellar with domestic and international wines available at reasonable prices. Our ambition is to satisfy the palates of all our guests, including the most discriminating.
During your stay, you’ll be invited to select from a generous variety of California Chardonnays, French Burgundies, Texas Cabernets, Argentine Malbecs and many others. All our wines are stored in temperature-controlled environments in order to assure quality and freshness, something we believe makes all the difference. Let us recommend a wine to complement the flavors in your regionally inspired meal.
For drinks before and after dinner, we offer a sizable variety of beers from the United States and Mexico, both alcoholic and non-alcoholic, as well as outstanding margaritas and mixed drinks.
As guests return again and again to Cíbolo Creek Ranch, they continue praise many of our signature dishes, including our Cumin Steak, Pork Loin in Guava and Plum Sauce, Chicken with Almond Mole, Squab Jalisco Style, and Quail in Oaxacan Black Mole. Among our desserts specialties are Tres Leches Cake, Viceroy’s Cake and delicious homemade ice cream.
